About the Recipe
Of everything I have learned to make since I started the Hoxsey diet, this is one item that EVERYONE loves! It is so simple to make, and good for you! So much better than anything I have bought pre-made!
Ingredients
3 Cups of Raw, Unsalted Cashews
1 Tbsp Coconut Oil (I prefer unrefined)
1 Tbsp Ground Vanilla Beans
Preparation
Step 1
Roast the cashews on a baking sheet at 350 Degrees for 5-6 minutes, or until fragrant. Remove from oven and let cool.
Step 2
Add the cooled cashews, coconut oil, and ground vanilla bean to a food processor. The consistency will begin looking more powdery. Scrape the sides as needed, and continue to process until the butter becomes creamy or your desired consistency. This should take at least or about 3 minutes, depending on preference.
Step 3

**Notes**
I find that my food processor does the job perfectly, but if you would prefer or do not have a processor, a good high-powered blender such as Vitamix should do just fine. Adjust times as needed.
I personally like mine very smooth and creamy. I usually spread on toast, but again, find the correct blending time that makes it perfect for you!
